Looking for some advice on job fit and hunting as a non typical graduate

Hey, sorry to fill these boards with another one of these topics but my schools not very good at helping and I don't have many others to talk to.

Brief intro: I'm an older student that originally studied finance at Baylor but had to leave due to family health issues. I got a job at Apple in sales with their business department and did really well, leading the market for almost the entirety of my time there. Finally got an opportunity to finish my schooling but ended up in Korea to do it. I got a scholarship for passing the language tests and keeping a high gpa. Ive worked my way through my last two years here and I'm finishing with a 3.9 in a very finance math heavy applied stats/econ major. I wanted to give myself the quantitative skills to back up the soft skills I've already learned.

I love fast paced environments, but also researching. I love to build models and figure things out. I'd love to work in a place that lets me use both of these skill sets but I'm just not sure where the would be. If anyone can point me in a direction to do more research or whatnot.

I was thinking at atradingdesk somewhere but I'm having trouble finding any jobs listed when I just search for that. I'd also think I'd enjoy working with derivatives and making products but again, I cant find many listed. Maybe even something in risk management?

I can work basically anywhere (exceptNYCsadly) but I'm coming from a foreign non target with no real internships, just a few personal project models and I started a club based around the mathematics of games of chance (I just really find probability interesting)

Anyways like I said I basically have no one to talk to about this so any help or guidance would be appreciated for someone in my situation. I've been sending out apps from last month and am hoping to start next January.
